Grown near San Adolfo in Huila, Colombia, this vibrant lot from producer Brayan Alvear is anything but ordinary. The process begins with a 24-hour pre-fermentation, followed by an aerobic rest — then things get wild. A five-day anaerobic fermentation takes place with dehydrated berries added to the mix, locking in rich fruit character before a 10-day stint in mechanical dryers.
